OLD SCHOOL SUGAR COOKIE DOUGH
Combine in large bowl, set aside.
1 Pound Salted Butter, COLD
1 Pound Granulated Cane Sugar
2 Large Eggs
2 Teaspoons Vanilla Extract
Using a stand mixer with the paddle attachment:
Cut the COLD butter into cubes and
cream with the sugar on medium/high speed until pale and fluffy.
Scrape down sides of bowl, add eggs and vanilla on low speed to incorporate.
Again, scrape down sides of bowl and gradually add flour mixture one cup at a time until well incorporate.
Dough will be very dense, turn out onto clean surface and gather together by pressing into a 2 inch thick rectangle.
Chill for at least one hour.
